In the 1870s, his great-grandfather, Pedro José Escalón, began farming in Santa Ana. Later, he established El Molino (The Mill), the first processing station in El Salvador. By the end of the 20th century, the family business went through a challenging period due to a new crisis. However, with Maurice's help, it experienced a revival. In 2003, Cafescal was founded, with a strategy based on the philosophy of specialty coffee. The company's name means "Cafes Escalon Calderon," where Calderon is the surname of Maurice's mother. The family now owns 10 farms and 2 mills. Mauricio is the managing director of the Cafescal Speciality Coffee export company. He is responsible for the administration and management of agricultural processes. His passion for coffee played a crucial role in his life, as despite earning a degree in architecture and gaining experience in social housing construction, he returned to the family business. In the late 19th century, Holanda, along with San Antonio and San Gabriel, were part of a single plantation called San Antonio. This is where the Escalon family's coffee business began. The first coffee export from El Salvador to the United States is believed to have occurred in the 1880s. Today, Holanda covers 8 hectares where Bourbon, Pacas, and Colombia coffee varieties are cultivated in the shade of Inga trees.
